
I must say, this week is off to a pretty good start! The house is clean, the fridge is stocked, and I have clean laundry (that is folded in drawers!), so I’m feeling on top of my game right now. Sometimes it’s really that simple.
Last week we had another successful week of meals; here’s what’s on the agenda for this week!
Breakfasts
We have a breakfast smorgasbord going on over here! We have multigrain croissants (who knew that was a thing?!), mini bran muffins, fresh strawberries, leftover squashed potatoes, and more sausage patties and English muffins. This morning as I was contemplating what to eat for breakfast, I realized I could eat breakfast foods for every meal today and be totally fine with it.

Monterey chicken + steamed broccoli + squashed potatoes (This dinner was all Eric and it was so good. He cooked the chicken on the stovetop and then smothered it in BBQ sauce, topped it with bacon, and melted Colby Jack cheese over it.)

Workouts
Last week was kind of a cluster, but I somehow managed to work out four times — two yoga podcasts and two long walks — which was one more workout than I was aiming to do. Unfortunately, I didn’t stick to the plan of taking a workout class outside of the house. I tried, but it just wasn’t in the cards. But I did try a podcast from Three Dog Yoga that was longer than the podcasts I’ve been doing lately so that was a nice way to mix things up a bit. This week, my plan is the same as it was last week: three workouts, one of which needs to be outside of the house. I’m not looking at a terribly busy week, so that shouldn’t be a problem.

I LOVE making walking part of my daily routine! After reading about low-intensity fasted cardio {and commissioning a guest post on it – http://moicontrelavie.com/2011/05/19/guest-post-low-intensity-fasted-cardio/ } I’ve been really consistent about walking 2.5-5 miles a day. Such a healthy way to stay in shape and I love that it helps easy the aches & pains of my back injury by taking the pressure of my discs.
I’m all about making stuff in bulk lately. I made a huge quinoa casserole yesterday and I’ll be making a batch of egg muffins today. I’m going to braise a boar roast for the first time tomorrow. Do you use a recipe for your salmon burgers? Sounds like something my family would love.
That ham & brie panini is on my short list to make the menu plan—and now I kinda want it for breakfast……

I’ve had a breakfast thing going on too, except I’m more about brunching it because I just don’t function well enough to be over a stove before noon. Late last week, I made French toast. Then over the weekend I made pancakes from scratch (which is a big deal because I usually make ‘em from a box). Later this week, I’m making Scrambled Egg Muffin Sliders as well as Breakfast Cornbread with Blueberries and Goat Cheese.

I finally tried the TJ salmon burgers, per your recommendation, and they were great, although I’m sure they taste WAY better on the grill (as opposed to the pan). I’ve taken advantage of all this time I’ve had at home by learning how to make my mom’s Sri Lankan coconut chicken. It is SO GOOD! I’ll have to post the recipe soon, because I think you’d like it too!

I had a plan for food. Sadly, when I get more than a few days in the mix, leftovers start to be a meal and then I realize that I don’t have enough leftovers to make it a meal, or I think my husband is going to take the leftovers and then he doesn’t… my good intentions occasionally get a little effed up. But! I did make a delightful white bean, kale casserole (which I may be tossing with pasta for tonight) on Sunday (success!) and dry, baked potatoes last night (meh), and although I may be throwing together leftovers tonight, there will be a quinoa pasta and broccoli cheddar casserole to fatten us up tomorrow night. But your ham and brie sandwich sounds amazing! So I may have to go there.
On a side note, I just found your blog via A Practical Wedding, and you’re awesome. Keep pushing!
I’m kicking ass and taking names about the foods this week. Having the day off yesterday, I cooked a pot of soup (from the new issue of Whole Living – seriously worth buying if just for this recipe, or, you know, I can email you a photo), made some simple vegetables and quinoa for dinner, and prepped the slower cooker with food for the week’s dinners. Oh and mopped the kitchen floor. And not because I made a mess. And, laundry – folded and put away (except for the hang dries in the invisible room).
My cold was kicking me this weekend (I took a sick day and slept through Friday) but I came back swinging with a great run and short yoga podcast yesterday and the 45 minute Forrest podcast tonight. The only falling short I’ve done is on my guest post for you! Ack!
PS your squashed potatoes recipe goes to ELR’s ham & brie panini…trying scope your potato recipes! I recently made salt & vinegar potato & kale cups and they were delicious, I’ve been in a potato mood since then.
