Foodstuffs: Jan. 28 – Feb. 3

This week feels off to a pretty good start! Eric and I got a lot of food at the farmers market on Sunday and we have a good week of meals planned.

Farmers market haul

Meyer lemons (I’m turning them into ice cream!)

Brussels sprouts

Rosemary and thyme French bread

Sirloin

Ground breakfast sausage

Bratwurst

Ground beef

(We got double of almost all the meat, and we had two pounds of ground pork still in the freezer, so we’re really stocked up for the time being!)

Breakfasts

Same as last week — lots of English muffin and sausage sandwiches!

Leftovers!

Dinners

Baked egg boats

Spaghetti with meat sauce + Caesar salads

Beer brats with caramelized onions + veggies + bread

Grilled steak + veggies + bread

Pizza

BBQ chicken thighs

Chipotle pork cheeseburgers

Workouts

Last week, I stuck to my plan and did three workouts, one of which was out of the house. I also took some extra walks with Eric. I’m going to keep the same plan for this week and then change it up in some way starting next week. I was thinking of doing a hip-opening challenge (something like 10 minutes of hip openers every day for 28 days) or aiming for two workout classes a week instead of one. I haven’t quite decided yet!

Okay blast from the past…my very first post on my old food blog in 2008 was meyer lemon ice cream. Ben had just given me a crate of meyer lemons for my birthday.

I’m using child watch at the Y for the first time tomorrow so I can get a gym workout in. Wish me luck!

I love this list – It gives me such great ideas for my boyfriend {since most of the food-related blogs I follow are vegan}, I’m definitely making that chipotle burger for him. My parents live in Albuquerque and the major benefit is the chilies & chipotle they bring me!!!

I would love to hear more about the lemon ice cream! I love making ice cream with coconut milk and lemon would be great!

Lemon ice cream? I die. I love lemon so much. When I was a little bitty one I ate raw lemons often. Now, I can’t do that, but I still LOVE lemon.

On the agenda this week: running, and lots of it. Using up food in the fridge. I have a roast going in the crock pot at home that I am hoping can be two dinners, but we will see how hungry we are tonight, of course. I also have a lot of leftovers. Lately I have been operating on the “do we have enough cat food and litter? if the answer is yes, proceed to question two: do we have enough food for the humans. if the answer is yes, no need to go to the store.” It’s been working pretty well for us, and is ensuring we actually RUN OUT OF FOOD before going to the store, which for us equals a hell of a lot less waste.

Can’t wait for the ice cream post!
This week is busy and exciting for me. I have started doing more freelance makeup work and I have my first paid film shoot this weekend. I am also starting to train to start running, for now it’s intervals of fast walking on the treadmill but I am excited for the progress. I pick up my CSA box today and am excited to see what’s in it and do some meal planning. Also scoping out recipes for Super Bowl Sunday.

Hey Rachel, miss commenting like I used to!

My week is going awesome! I just sat down yesterday and made a workout plan for myself, did the first workout today, and put some chicken in the fridge to thaw so I can do some meal prep (as in, a dozen tupperware containers full of chicken, brown rice, and veggies!). My health hasn’t been the best and I spent all of January feeling gross so I got on Instagram, followed a bunch of health enthusiasts, saw what they were doing and got motivated!

Instagram is great for motivation! I browse that and/or read certain health blogs when I’m feeling like skipping my workout or half-assing it. I’m so glad you’re feeling motivated again though! That’s the best.

Yes! With the whole Addison’s disease thing, I realized that I HAVE to heat healthy and exercise most days of the week or I have a lot of dizziness, fatigue and general crappy feelings.

Of course, you always motivate me to try and stay fit and work towards having it allll. I’m always watching and reading, even when I’m not commenting ;)

The brats look amazing! Now to find a way to trick Josh into eating them…

As far as what I have planned, I’m kind of really excited to make crepes for brunch this weekend. And I’m finally getting around to making a chicken-based pot roast in the slow cooker tomorrow (I think I’ve been saying I’ll do it for about a month now).
