
Good Monday morning! Here’s what’s on the menu around these parts for the week ahead!
Breakfasts
Eric picked up croissants this week to mix things up, much to my delight. And last night, we made iced coffee in the toddy cold brewer; I’d been drinking hot coffee since we won the Keurig back in December, but the cold pressed stuff really is my favorite.
Lunches
Leftovers, per usual.
Dinners
Baked potato & broccoli cheddar soup + turkey club sandwiches
Turkey sausage & spinach lasagna
Nachos
Baked French toast sticks + eggs + sausage
Hamburgers (Last week we added Muenster cheese at the recommendation of my friend Julia and it was great. Definitely worth trying!)
Buffalo chicken dip + French bread + veggies and dip
Pizza
Workouts
Last week was pretty good for working out; I did four yoga podcasts (30-60 minutes each) and took two power walks. I also kept up with my heart and hip opening yoga challenge. This week my goal is much the same, but I also plan to do two workout classes this week, as my goal was to do two in February and, well…the clock is ticking. I really want to go take more workout classes…it’s just that every time I plan to, something more important comes along and it doesn’t happen. My to-do list has felt pretty overwhelming lately, and tackling that is definitely my top priority. But! I’ll see if I can tear myself away from my computer and to a class this week.

I’m dreading my week and that’s a horrible way to start a Monday. I had stressed myself out so much that I was up at 2:30am this morning. :( It’s really upsetting to me that insane To Do Lists and deadlines are fine but just the thought of 5 social engagments fills me with so much anxiety that I can’t sleep.
I will be working out & walking to/from EVERYTHING each day this week to help cope w/ the stress. Hopefully I can find some time to add yoga!!!

Ugh, that kind of stress is the worst. I tend to get more stressed about social engagements too; I think it’s the stress of having to be on time, worrying about traffic, figuring out what to wear, stressing about how it cuts into the things on my to-do list…yeah, I feel ya. Hang in there!!
Do you guys still use your juicer?!
Ugh, we have fallen off track with it in the past couple months and I keep meaning to ask Eric to add stuff for juicing to our grocery list, but I forget each week! Thanks for the reminder!

and threw together a “use up that leftover taco meat” chili which I’m having for lunches this week. We’ll do a big salad as usual at some point and I need to figure out the rest.
My back has been out of whack lately, keeping me from exercising out of sheer pain … which of course only perpetuates the cycle of being lazy and out of shape … but this pain is so intense I don’t know what else to do. Pushing through it could cause an actual injury. Argh! I’m hoping to feel better enough to do a basic flow yoga class on Wed. night!

Ugh, I feel you on the pain thing getting in the way of exercising. When I was having trouble with my Fallopian tube, I went through that with my workouts on and off for months and it was such a shitty feeling. I hope you feel better soon!
Also, that salad looks legit. Yum!
I’m all about breakfast foods, so those french toast sticks will have to be in my life soon.
We’re trying to keep things pretty simple since Josh works almost every night this week and I’ll be leaving town later this week. (I don’t want to leave him with leftovers galore!) I can’t decide if I’m more excited to try the gluten-free chicken chili I found or the crockpot lasagna soup.

My week is looking… not the way I want it to look. It’s the LAST week of my 40-day yoga challenge, which has been so awesome. But I have late nights at work and a ton of homework this week. Not quite the blissful, yoga-ful week I’d envisioned to end my challenge! But, ok, the challenge was really about making yoga a part of my normal life, not stopping the rest of my life to do yoga. I guess this is a good time to see how I do when it gets busy-busy. I’ll just take a deep breath and try to remember that.
Good luck getting to those workout classes this week! It is SO hard to add that sort of thing back when it’s crept out of your routine, but it always feels so great when you make it happen!

My plan for the week is all… discombobulated. I am sick with a fever and this is our first week of trainign for the relay. fortunately, the first two weeks are shorter runs that I do with regularity, but still. I just want to curl up in a ball and sleep.

I really enjoy these posts with meal plan ideas! This is a probably an overly simple question… but I am curious about your leftover strategy for lunches. Do all of the dinners get turned into lunch leftovers? I haven’t quite figured out the right formula to have enough of each dinner to eat as lunch the next day for the hubby and I. Or, often certain items are not great leftovers.
