Make it: Mini-quiche

So, Eric accepted a new job, which is exciting, but it also means that starting next Monday, he’ll need to be at the office an hour and a half earlier. I’m planning to get up with him at the new time since I’m a morning person and like having extra time to be productive in the morning, and because we both really enjoy the time we spend together in the mornings. I’m a little sad we’ll lose our morning ritual of watching “The Today Show” (he’ll have to leave before it comes on) not because it’s a particularly great show but because it always gives us something to talk about and it’s just become a thing we do together. We’ll have to find some new morning entertainment. I was thinking maybe could mix things up a bit and start recording “Conan” and watch that in the mornings. I used to do that with “Chelsea Lately” and it made for kind of a fun breakfast every day.

Anyway, we decided to start easing into the new routine this week, and Monday morning, I decided to use the extra time to make these mini-quiche for breakfast. I modified the recipe slightly; I used five eggs, swapped cheddar cheese for the Parmesan, and added in crumbled bacon and chopped broccoli. I also made four instead of three. They turned out really well! I forgot how much I love broccoli with eggs and cheese. Next time I make them, I’ll probably use more cheese, but other than that, they were really good.

The recipe was really pretty quick to make (even the baking time felt like it went fast) and super easy. Definitely another good breakfast to add to the rotation!

I thought Eric loved the job he was in, and that was a main deciding factor for him wanting to stay in Texas??

He did, but he had his reasons for moving on (which I fully support/agree with)!

I definitely need to make these soon. I love quiche. The Boy doesn’t so much (and yes, I plan to reveal his real name soon enough, esp since my first name is all over my photo watermarks now)!

Earlier is good, though it’s hard when you are having to adjust to an earlier bedtime. We currently have different wakeup times, and while it’s nice, there are days when my waking up 1+ hour after he does makes it weird when bedtime rolls around – I can be VERY VERY AWAKE then.

We watch The Daily Show and Colbert Report over dinner every night (through our Roku via HuluPlus), but I think they would be a great way to start the day!

I wish I was a morning person. I’d love to have something like this for breakfast. (Though it would probably work for a weekend brunch for me!) Looks yummy!

It always impresses me that you do hot breakfasts during the week. I usually have smoothies – made the night before – or cereal. Coffee is set up the night before, lunch is packed, and, if possible, I’ve showered. My mornings consist of sleeping to the last possible minute and then rushing out the door. Not ideal, but I need to be at work at 8 and I’m decidedly not a morning person. .

These look so delicious! I’m definitely going to have to try them. I wish Eric good luck and have fun with the new schedule. I admit I’m NOT a morning person, and I often leave my husband asleep in bed with a quickly cooling cup of coffee next to him. I miss being able to chat with him over coffee. Sigh
