Eric and I arrived at my house in Michigan late on Thursday night and drove up to Traverse City on Friday for the wedding of one of my best friends. Since my last trip left me feeling sluggish and bloated, I decided to prepare a little better this time. Our week(ish) of Whole30-style clean eating left us both feeling good, so last Monday, Eric and I made this Whole30-friendly apple pie trail mix for our trip.
I wasn’t sure what to expect. I mean, trail mix is trail mix, right? Wrong. This stuff is exceptional. The toasted nuts (which I made without burning for the first time in my life!), dried apples, and spices really brought it all together. I also decided to add coconut flakes to our blend, something I definitely recommend because those little flakes are so satisfying.
So good! I definitely recommend making it this fall.
